HONEY GLAZED, GRILLED CHICKEN

  • 1 lb boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 tablespoon honey
  • 1 tablespoon finely chopped fresh sage
  • 1 clove garlic, minced
  • 1 tablespoon yellow mustard
  • 3 tablespoon pineapple juice concentrate
  • 1/2 teaspoon mustard powder
  • Dash of ground red pepper

The Glaze:

Bring the chicken broth to a boil in a small pan over medium heat until it is reduced to 1/4 cup. Add the sage, pineapple juice, red pepper, mustard, mustard powder, honey and garlic. Bring it to a boil on low heat, stirring it occasionally for 5 minutes. Remove from the heat.

You can use it immediately of refrigerate for later use.

Grilling the chicken:

Coat a grill rack with cooking spray. Preheat the grill for 10 minutes on medium heat.
Grill one side of chicken for 4 minutes then turn and grill the other side for 1 minute. Apply the glaze to the chicken with a spoon and grill for another 4 minutes while you are applying the glaze.
Grill until the juices run clear and a thermometer inserted in the thickest portion of the chicken registers 170º F.
Dress with parsley and lime and serve.
