CHICKEN FILLET WITH BARBEQUE SAUSE

  • 4-6 chicken fillets skinless
  • Garlic powder to taste
  • 1 cup chicken broth
  • 1 teaspoon barbeque sauce
  • 1/2 teaspoon oregano
  • 1/2 teaspoon Spanish paprika
  • 1/2 teaspoon yellow mustard
  • 1/2 cup sliced mushrooms

Preparing the sauce:

Bring the chicken broth to a boil in a small baking dish over medium heat until it is reduced to 1/4 cup. Add the barbeque sauce, oregano, paprika and mustard and whisk until smooth.

Cooking the chicken:

Preheat the oven to 350ºF. Place chicken in a baking dish and sprinkle with garlic powder and pour the sauce over it.
Put it in the oven uncovered and bake for 30 minutes, then add the sliced mushrooms and bake for another 30 minutes.
