BUFFALO CHICKEN WINGS

  • 12 chicken wings
  • 1/4 cup butter
  • 1 onion, finely minced
  • 4 cloves garlic, minced
  • 1/4 to 3/4 cup hot pepper sauce
  • Sea salt
  • Vegetable oil (for frying)

Fill a deep frying pan with one inch of oil and heat over medium heat until about 300°.

Melt the butter in a small pan over low heat and add minced garlic and onion. Blend in a blender to make it smoother. Cook until golden brown, stir in the hot sauce and then add salt. Remove it from heat.

Split the chicken-wings at the joints and cut the tips. Rinse with cold water and dry with paper towels.

Re-heat the sauce to around 375° and carefully lower the wings into the sauce. Fry for 12 minutes or until medium brown.
Remove the Wings from the pan and drain on paper towel. Cover with hot sauce.
